Finally, a sweet fruit bread called Biskupský Chlebi?ek is commonly used in Slovakia on Mikuláš and is also used a favorite in some households during the Christmas holidays (Viano?ne sviatky). Since most of us enjoy good Slovak food, a recipe seemed appropriate.
- ¼ pound butter
- ½ cup icing sugar
- 4 eggs
- ½ cup all purpose flour
- 2 ounces chocolate chips
- 2 ounces almonds
- 2 ounces chopped figs
- 1 ounce raisins
- 2 ounces candied chopped fruit
- 1 tablespoon baking powder
Mix the butter, half of the sugar and the yolks. Then beat up from the egg whites to a snow, and add the other half of the sugar and finish the snow.
Fold the mixture into the egg yolk mixture half of the dry ingredients with the other half of the snow. Finish adding the rest of the dry ingredients together with the other half of the snow.
Bake the mixture in a bread loaf pan. Put butter and flour on the baking pan before adding the mixture. Fill the pan about ¾ full, since it will rise. Bake at 350º F. for 45-60 minutes.
Check that the Biskupský Chlebiček is fully baked by inserting a toothpick in the middle of the bread. If it comes out clean, the bread is ready. Cool it, and then slice. You may sprinkle it with confectioners sugar or some other topping for decoration and/or taste.
